  • Age of harvest: The fish are harvested at a minimum of 10 years of age

  • Hue: The grains range from a light to dark brown colour, even yellow or gold, with a tint of green

  • Taste Profile:The Amur has a nutty and light, buttery flavour with a long, briny finish
